Start with beans or chickpeas
A drained can of beans can turn a bowl of vegetables into a more substantial meal. Chickpeas work well with roasted sweet potatoes; white beans blend into chili. Rinse canned beans, then dry them well if you plan to roast them.
Keep the vegetable texture
Roast vegetables in a single layer and stop boiling green beans while they still have some bite. Leaving scrubbed sweet potato skins on is an easy way to keep more of the vegetable in the meal. Texture matters: a meal you enjoy is easier to repeat.
Add a whole grain you like
Brown rice, barley, or whole-wheat bread can round out soup or salad. Use the grain’s package directions, because cooking times vary. If you swap whole-wheat pasta into a recipe, reserve cooking water and check tenderness before draining.
Make changes gradually
